Yeast meat pockets with yogurt dough are a simple recipe for exquisite pastries. An ideal recipe for both breakfast and as a bread substitute for lunch. My whole family loves my crispy pockets outside and so juicy inside, with notes of dry spices and herbs.
For the dough you will need:
– Premium wheat flour
– Yogurt
– Dry yeast
– Honey
– Salt
For the filling, I used:
– Ground beef
– Onion
– Garlic
– Black ground pepper
– A fresh bunch of dill
– Dried Provencal herbs
– Sweet paprika
– Ground cumin
– Salt
– Olive oil
For sprinkling on savory turnovers, I use blue poppy seeds and white sesame seeds; they combine perfectly with the meat filling and emphasize the crispy crust.
As an alternative, cheese with herbs can be used for the filling. Salted cottage cheese with fresh parsley and dill, boiled eggs with spinach also work well, and you can also make a sweet filling—for example, frozen or fresh berries with sugar, apple or plum jam, or sweet vanilla cottage cheese.
