Ingredients

  • For the Cheesecake Filling

  • 1000 g cream cheese, softened

  • 200 g granulated sugar

  • 3 tbs cornstarch

  • 3 large eggs

  • 400 ml sour cream

  • 1 tsp vanilla extract

  • 1/2 ts salt

  • For the Strawberry Topping

  • 450 g fresh strawberries

  • 20 g cornstarch

Directions

  • In a deep bowl, combine eggs, cream, sugar, and salt until smooth. Add the soft cottage cheese, vanilla extract, and mix all the ingredients together.
  • Sprinkle fresh whole strawberries with cornstarch. This will keep all the juice inside.
  • Pour the liquid filling into a baking pan lined with parchment paper and place the strawberries on top.
  • Bake at 160°C for 40 minutes. After baking, leave it in the oven for 1 hour. Before serving, it’s best to chill in the fridge for a couple of hours.
  • Serve with strawberry jam or honey, or you can just enjoy it as is.
  • Bake at 160 C for 50–60 minutes, or until the edges are set and the center is slightly wobbly.
  • Turn off the oven and leave the cheesecake inside with the door slightly open for 1 hour.
  • Remove and cool completely. Refrigerate for at least 4 hours, preferably overnight.
  • Serve with strawberry jam or honey, or you can just enjoy it as is.
  • Prepare the Strawberry Topping. Combine half of the strawberries, sugar, and lemon juice in a saucepan.
  • Cook over medium heat until softened.Add the cornstarch mixture if a thicker sauce is desired.Let cool completely.
