Ingredients

  • 400 g of creamy curd with 18% fat

  • 150 g of sugar

  • 15 g of starch

  • 80 g of cocoa

  • 2 eggs

  • 330 ml of heavy cream

  • 1/2 tsp of salt

  • 1 tbsp vanilla extract

Directions

  • In a deep bowl, combine sugar, salt, cream, and eggs, and mix until smooth.
  • Add the creamy cottage cheese, vanilla extract, cocoa, and starch, and use a whisk to mix in circular motions until you get a smooth consistency. You’ll end up with a fairly thick chocolate mixture.
  • Transfer the cottage cheese mixture into a pan 18 cm in diameter lined with parchment paper.
  • Bake in a preheated oven at 170°C for 35 minutes until golden.
  • Do not remove from the oven immediately after baking; leave it for 1 hour with the door closed.
  • Place in the fridge for at least 3 hours to set.
  • Serve with a scoop of vanilla ice cream. It’s just perfect. You can also experiment with fresh berries or serve with berry jam.
