Bread flour – Provides more gluten-forming protein, helping the loaf become lighter, chewier, and better structured. It balances the heavier whole wheat flour.
Water – Hydrates the flour, allowing gluten to develop and enzymes to work. It also determines how soft and open the crumb will be.

Make this easy homemade sourdough bread with simple ingredients, a crispy crust & soft center. A beginner-friendly recipe for fresh family baking.

Ingredients

  • 120 g of active starter

  • 320 ml of water

  • 470 g of wheat flour

  • 10 g of salt

  • 100 g of dried cranberries

  • 40 g of flax seeds

Directions

  • In a deep bowl, combine the active starter, water, and wheat flour, and mix until smooth. Leave covered for 40 minutes.
  • Wet your hands with water, do the first stretch of the dough by folding from the edge to the center, stretching the dough as much as possible. Then leave it to rest for another 40 minutes.
  • Add the salt and whole dried cranberries and fold in the same way, stretching the dough as much as possible. This way, the formed gluten will give the bread a light and airy crumb.
  • Fold the dough one more time.
  • Shape the loaf into the desired form, transfer it to a baking pan lightly sprinkled with flour, and place in the refrigerator for a cold overnight rise for 16 hours.
  • Preheat the oven to 220 degrees Celsius.
  • Bake the bread for 5 minutes, then take it out of the oven, make a slash along the length, and bake for another 10 minutes.
  • Reduce the temperature to 180 degrees Celsius and bake for another 15 minutes. Fresh homemade bread is ready! Enjoy!
