Ingredients
650 g of dry full-fat cottage cheese (9%)
100 g of wheat flour
2 eggs
60 g.butter
1 tsp. vanilla extract
Zest of half a lemon
150 g of sugar
0.5 tsp of salt
For the filling:
150 g of raspberries
10 g of starch
Juice of half a lemon
50 g of sugar
Directions
- Preheat the oven to 170 degrees Celsius.
- In a deep bowl, mash the cottage cheese with a fork, add sugar, salt, vanilla extract, melted butter, 2 eggs and the zest of half a lemon.
- Add the flour and knead a firm dough. Divide it visually into 6 parts. Form round buns.
- Roll the pieces in flour and place them on parchment paper. Use a glass to make an indentation in the center. Bake for 15 minutes.
- Make the jam. In a saucepan, add berries, sugar, juice of half a lemon, and cornstarch. Cook until it boils, then turn off the heat.
- Decorate the baked buns with bright berry jam, placing it in the center. One dessert spoon of jam is enough for one bun.
Notes
- 1.Use full-fat cottage cheese for the softest, most tender buns.
2.Fold the raspberries in gently to keep them intact.
3.Do not overmix the dough, as this can make the buns dense.
